Bacon & Avo Salad

With bacon and home made croutons this is probably not the healthiest recipe, but it’s a salad so I figure I can at least pretend…

We went away for a weekend with friends a few weeks ago, and bought two packets of bacon for breakfasts that were never eaten and defrosted in the car on the way home. After a weekend of over indulging I wanted to at least try and get back on the straight and narrow…and well I’m sure spinach leaves immediately make you thinner….right?!

Ingredients: 

  1. 1 x Avo
  2. 1 x packet of bacon (rashers for my Irish friends)
  3. 2 x pieces of brown bread
  4. Rocket leaves
  5. Baby Spinach leaves
  6. 1 x small glazed fig
  7. Crumbly feta
  8. Olive oil
  9. Salt & Pepper

Method:

  • Pre-heat the oven to 180 degrees Celsius
  • Cut bread into bite sized chunks & drizzle liberally with olive oil, and season with salt and pepper
  • Place the seasoned bread cubes/chunks into the oven and bake for approx. 20minutes
  • Meanwhile cut the bacon into strips and fry the bacon until crunchy, then set aside to cool
  • On your plate place the washed leaves, chopped avo & chopped fig.
  • Remove croutons from the oven, pat with a paper towel to remove any excess oil and allow to cool
  • Mix croutons and bacon together and place on top of the green salad
  • Sprinkle with some feta
  • Enjoy!
