Lavender infused Lemon Squares

Oh how I have longed to type the name of a recipe with something infused in the title! Such a fancy way of saying you added a flavour…makes me sound so posh!

This is another one of those recipes that punctuated my childhood, but my sweet tooth is not as sweet as it once was, so I toned down the quantum of sugar and changed the base by using nutty wheat flour (yes, I’m having a small love affair with nutty wheat flour!). Also, those who follow my Instagram will know, it was time to trim the lavender bushes in the garden, but I couldn’t let all that beautiful smell go to waste! So I re-potted some stems, made lavender bags for our drawers, dried some and decided to infuse (so posh!) the base of the cookies with some lavender…

These delicious little lemony squares went down a treat, I brought some to the office and some of the guys tell me they had at least 4 each! They’re not too sweet, freshly full of lemony goodness and feel light and fluffy.

INGREDIENTS:

Base

  1. 750ml nutty wheat flour2017-08-06-17-30-45-e1502886769700.jpg
  2. 250-500ml soft margerine
  3. 1 tsp honey
  4. 1/4 cup icing sugar
  5. 4/5 lavender buds (dried)

Topping

  1. 4 eggs
  2. 1 whole lemon
  3. 3/4 cup white sugar
  4. 1/4 cup all purpose white flour
  5. 1 tsp baking powder
  6. Icing sugar (to dust on top)

METHOD:

Base

  • Combine flour and sugar in a mixing bowl
  • Take the lavender buds and crush trough a sieve into the flour mixture
  • Cut in soft margarine and honey until mixture resembles breadcrumbs

  • Bake for approx. 30min at 180 degrees celsuis until lightly golden brown

Topping

  • Beat eggs in a large mixing bowl until frothy
  • Grate the lemon and add the lemon rind
  • Then squeeze the remaining lemon and add the juice to the mixture
  • Sift the sugar, flour and baking powder together and add to the wet mixture
  • Stir together until just moistened

  • Spread the topping over the golden base and return to oven for another 25 minutes until lightly toasted looking on top
  • Sprinkle the top with icing sugar. Cut into squares and enjoy!
